Sunday Recipes To Help You Prep For A New Week.

Happy Sunday everyone! Sunday is by far my favorite day of the week. It is the day I get to hang with my family. I get to get my clients routines and schedules ready for a new week. I get to food prep for the upcoming week (and we all know how much I love eating food). I get so excited for all my classes and what new moves and exercises I can come up with. I wanted to share these recipes a few days ago but life got in the way. I hope you understand and will forgive me. 🙂


Quick And Easy Lunch

Like me, I am sure that many of you out there have a crazy busy schedule. I sometimes wonder how in the hell I get everything done! I have to have easy things that I can pull out of the fridge and throw together in mach speed. If you have been following me for awhile, you know that I am color person when it comes to eating. I love anything that is green, or red, or yellow.



I used all my left overs for this meal and it turned out to be fantastic!

*String beans that I had used for a stir fry

*Asparagus that I had with my chicken

*Some left over steak that I had made fajitas with

*topped with spinach and salsa and hot sauce

Quick and easy and GREEN too! 🙂


There we all were.. sitting in the kitchen having an hour convo about all the drama that was going on at school. I like this boy, I hate this girl, I want this shirt, I want to cut my hair and the list goes on and on and on.  Those of you with teenage daughters let me hear an, AMEN!! Don’t get me wrong, I get into it! 🙂 So, as they are speaking to me, I am cutting away at the cutting board. I don’t even think they saw what I was doing. Then a funny thing happened. The second I got this mixture into a bowl and placed it on the counter with an open bag of chips, there was silence, and then laughter, and then words of praise for me( their mother) of pure love and gratitude. Then somehow like a magic trick the boys showed up. And then in less than 5 minutes the whole family was gathered around the counter laughing, eating, praising, and hugging me for making such a delicious dip.

NOTE TO SELF: If you are feeling a little depressed, make this dip. If you are wanting some praise, make this dip! If you want to get all the kids together quickly, make this dip! If you want them to eat something healthy, make this dip! If you want the girls to stop talking about boys for a few minutes, make this dip!



You will need.

*I use 5 avocados-obviously don’t use as many if your family is smaller

*1/2 green pepper cut up into small pieces

*1/2 Red onion cut up into small pieces

*1 can of black beans

*A big handful of spinach cut up very small

*I used about 3/4 of a jar of Pace’s garlic and lime salsa verde

*OF COURSE a splash of hot sauce

P.S I use a little of this the next morning on my scrambled eggs and die every time. It is SOOO GOOD!
